Supper clubs are very close to our heart...after all we started as one. Perhaps we need to start with some definitions.
What exactly is a supper club? In this day and age words seem to have no accountability; what we call the "boutique hotel" problem is ubiquitous. Everyone's a boutique hotel and the truly authentic ones are lost in the shuffle.
While it can be a nebulous concept, here is our definition:
1. The hosts and proprietors are usually the chefs
2. Most of the money and energy goes on the plate, not on the walls (in fact in most cases there are no walls)
3. It is as much about the people as it is about the food
4. Surprise and wonder are common ingredients (which is why a restaurant cannot be a supper club)
5. Last but certainly not least it never stays still, both physically and spiritually.
